I've been inspired to collect moments - not only those adventurous ones in the jungle or the sea but also my food moments. They're all some kind of effortless meals with least preparation, most importantly they look good, and yum!

I have this kind of addiction over mix-and-match things - like this.
Me and my gorgeous housemate been making overnight oats for quite some time, and when I've got no time, or merely too lazy for just a simple overnight oat, I opt for some lazy breakfasts. All I have to do is, do the cutting and that's it!

To prepare a breakfast mix-and-match bowl, there're a lot of options for you to choose from, based on the type of nutrients sources. You can customise yours! 

Carbohydrate base [2 tablespoons]
Instant oats
Rolled oats
Buckwheat
Cereal/ oat crisps
Cornflakes
Granolas

Milk base [Half cup]
Full cream milk (higher in the total amount of fat)
Low-fat milk (lower in the total amount of fat)
Fat free milk (No significant amount of fat)
Unsweetened soy milk (for lactose intolerant)
Formula milk (based on personal health condition)
Yogurt/ Greek Yogurt (Thicker texture)

Fibre base (Fresh fruits or vegetables) [Half cup]
- Berries
- Grape
- Apple
- Banana
- Avocado (Heart-healthy fat)
- Guava (It's the top sources of vitamin C!)
- Passion fruits

Why berries?
Because of its antioxidants😋

My usual choices are
- 2 tablespoons of instant oats + granolas
- half cup of low-fat milk/ formula milk
- 1 banana/ half cup of apple (I will definitely go for berries if I able to get them with good price)
- 3 tablespoons of chia seeds + cashew nuts + black sesame powders
- 1 tablespoon of raisin (or 1-3 dates)

Love it! Never get bored of them.

It's the best thing ever for a person who is always lazy to go out for breakfast, for people who stay alone and don't really enjoy eating alone outside, for morning or tea-time snack to be brought over to the office, or for nomad who always travel to places where it's hard to find food.

I read this article "Why Eating Alone May Be Bad for You" from TIME. It’s possible to draw a causal link between eating alone and increase in weight, right? 



Bukit Batu Chondong

A short hike to Bukit Batu Chondong was the first one in 2018 after a long hiatus. For a beginner like me, this was a pleasant slow hike, peaceful and comfortable as it isn't too crowded especially early in the morning.

It took us about 30-40 minutes to reach the peak, after passing some steep angle descent and crossing through the bamboo forest. Rock formation can be seen along the last few meters of hiking path, which is quite similar to Tabur. A little rope climbing and rock maneuvering are required to get to the viewpoint. It seems to be quite dangerous, but it is the only way to reach the peak.

The space at the peak is limited, it couldn't accommodate more than 15-20 people. There's a lower viewpoint around, we can chill and have a rest there.

A signboard showing the turning and direction to the Batu Asah Waterfall and to the peak of Bukit Batu Chondong is located at the main junction of the trail, so don't have to worry, the possibility of getting lost in this jungle is very low. We chose to skip the waterfall for this time, my body wasn't ready for a longer trail. :')

The stunning view from the top and fresh air worth the battle of the feeling of afraid and wanting to complete the hike. I was never in this much of fear before during a hike and this was the first time! 

This is the scariest part as it had been long since the last time I merely depended on the arm strength and body balancing for a climb. My muscles were trembling!

All that in my mind was "a wrong and weak grip and I gonna fall..."
"I need to try but I'm so scared"
"Okay just a small challenge lets do this"
But it's always true, can't make it without a good friend/ team.

It was about 7.15am when we got up to the peak and we were the first one.

Bukit Batu Chondong - the most challenging part of a hike

Never deny that hiking makes people feel good.
Because there're paths that I can't figure out in life. 
There're difficulties, challenges, and doubts that are hard to be resolved - which then defeated me and, I lost faith in believing that I able to overcome them. 

But being in the woods/ jungles or crossing every path during a hike, it soothes my mind.
The feeling of being able to sort out the way to get up to the peak with like-minded people charged me. The sense of accomplishment after a few hours journey, it gives a huge lot of contentment, even though it is brief. I have to keep reminding myself - good things take time. It takes beyond few hours journey.

I connect with my group of funny and crazy friends who taught me that "LIFE IS SHORT, LET IT BE AND YOU ONLY LIVE ONCE, LET'S HAVE FUN". Conversations on trails or on the tops of mountains are more relaxed and honest. I feel okay to be discovered, or, disclosed, mentally.
I met many elderly during a hike, some are couples. They are sweet.
And yea, my boyfriend and I found our similar interests through a hike.

Nothing beats the indescribable feeling when breathing in crisp, fresh mountain air.
To conquer the fear needs lots of preparation. I definitely am not ready for Rinjani or Bromo or what so ever crazy long hiking trails, physically. Gonna visit the path that I'd been to, again!

In conjunction with the International Women's Day, I had a good time celebrating it with Keds and Rawsome Malaysia at Rawsome's space located at T6, Sg Buloh. The best part of it other than having the chance to share nutritional information during the DIY Healthy Meals Workshop - which explained the reasons for choosing healthier choices of ingredients in your meal preparation, an hour of yoga time with an experienced practitioner had lighted up this short and simple celebration. Every yoga time with different groups of people is always inspiring. :)

I started my yoga journey while embarking on my first full-time career with a talented colleague, Jenice Fong. Other than yoga, we also conducted sessions like Zumba, Tabata, it was really fun. I began to join Yoga class in AshBeNimble with Stephanie after that; and then I joined regular classes in Dyoga Hub Tropicana Avenue, Petaling Jaya. No not going to forget WaiWai, specialized in Yin Yoga; Janine, a young yoga instructor; and Dolores, the passionate founder of Dyoga Hub. If it's not that I don't have a fixed stay in the city, I wouldn't have changed the classes. Thanks to all inspiring yoga teachers that I've met, thankful enough.

The DIY Healthy Meals Workshop started after lunch. I'm glad to have met the two friendly ladies, Jessie and Justine, from the press and media. We will meet again someday, I hope so.

Soba noodles are Japanese noodles that are made from buckwheat flour. 

They are a good source of nutrients - carbohydrates, protein (comparing with other grains produces), manganese and thiamine. Even though soba noodles don't offer a significant difference in the amount of other vitamins and minerals, but it contains more fiber than traditional pasta, and, lower in Glycemic Index (GI), which is a better choice for diabetes patients.

Health benefits include plasma cholesterol level reduction, neuroprotection, anticancer, anti-inflammatory, antidiabetic effects, and improvement of hypertension conditions.



Since buckwheat does not contain gluten, buckwheat noodles are a good choice for people following a gluten-free diet or those who are having celiac disease.

There are a lot of choices of ingredients to choose from to make a serving of healthy breakfast or as a meal replacement (for weight management):
- Chia Seeds soaked in milk/ soy milk (soy milk suitable for lactose intolerance)
- Goji Berries (high in antioxidants)
- Almonds flakes
- Organic cocoa nibs (high in antioxidants)
- Digestive biscuit crumbs
- Oreo biscuit crumbs
- Passion fruits
- Kiwi purees
- Mango purees
- Strawberry purees
- Dragon fruit purees

You can have other ingredients adding in based on your preference, for example, raisin or dried cranberries, other types of nuts, different fruits purees.

Packing own lunch, self-preparation of food sounds like a heavy duty for most of the people now. So for those who always short of time especially in the morning, busy and rushing out to work, or those who opt for small and convenience meals, these simple recipes will be helpful. It can be kept in the fridge and you will have your quick breakfast ready for the next day!

Chia seeds are from the member of the mint family.

It's popular with its ability to swell and form jelly-like texture, as versatile ingredients which can be eaten raw, soaked in milk, yogurt, honey, smoothies or juices.

Chia seeds are an excellent source of omega-3 fatty acid - ALA (Alpha Linolenic Acid), which is one of the polyunsaturated fatty acids. It's known for its anti-inflammatory and protective effects on the heart.

They also are a good source of fiber, benefit bowel regularity, and digestive health. The rich fiber content in chia seeds gives people a feeling of satiety as it absorbs a considerable amount of water and immediately expands in the stomach when eaten. Fiber-rich food also able to slows the glucose passage into the blood, stabilizes the blood glucose level. 

Chia seeds are high in antioxidants (minerals including iron, calcium, magnesium, and zinc), prevent the body from inflammation and free radical damage, support skin's health and speed up the skin’s repair systems.

Chia seeds also provide plant-based sources of protein. An adult would typically consume about 1-2 tbsp of chia seeds daily, which provides approximately 140 kcal (which makes it suitable to be used as meal replacement).

This is the umpteenth time of conducting public health talk yet it still gives me butterfly in my stomach every time. Let's get ready for the next one.

This hike to Fraser Hill via Pine Tree Trail was one of the happy achievement unlocked in 2017.

Started to be so in love with the view from the top since 2015, cause everything is just worth it after a long struggle. Even if there is no breathtaking view, the feeling when getting up to the top is some kind of extraordinary happiness.
Also, the contentment after that physical exhaustion of climbing.
And it feels good to be lost in the right direction. Like you know you will get there, not sure how long it takes, slowly but surely.

Heyyyya to my hiking buddies, cheers to the never ending ideas in getting a place to hike and cheers to those unforgettable picnic time in the jungle. Next hike? - Unknown date. #yougottounderstandhaha Anyway still feeling so blessed to have known you all in life.

So the journey started with a crazy drive up to the Hill from Petaling Jaya. The road is less tortuous than Cameron Highlands, still it was a long journey. Weather was good, made this hike with temperature at about 19 - 22°C a special one. Chilly.

#sneakpeek This is the peak we reached via Pine Tree Trail Fraser Hill after a 7+ hours hike, 1448m above sea level.


 It took a while to reach the entrance of the Pine Tree Trail. We passed by a peaceful town with some nicely built colonial-style buildings. The trail begins at a dead end near a characterful bungalow.

It is a 5.5 km long trail, we took about 7+ hours to reach the peak.

Oh ya, I got up with the help of the hiking stick. Can't imagine how tiring my legs gonna be without this. Thanks to Jiang!

This is the tough part of the hike, dangerous steep route. We crossed it anyway! 
And we got down using the same route too.

Keep going going going

Beautiful view from peak of Pine Tree Trail, Fraser Hill. There are actually a lot other natural trails to get to several different peaks.

Finally. Satisfaction.

We got out from the trail right before the rain poured. Quite a bit of lucks isn't :)
Not easy at all. From morning till night. I was actually quite scared.
Slightly late and we will all get stuck in the darkness of jungle. And no one else can be seen along the trail. Just 4 of us. No guidance.
It took awhile to recall how time passed while we're in the jungle. Love this feeling.

On a scale of 1-10, rate the level of challenge:
I can't answer this.

Probably cause along the way there are time where I felt so uncomfortable, it was all depended on the voice that I kept telling myself is okay just a lit bit more to get up to the peak.
And I speeded up when going down from the hill. Cause I was so worried that I would get stuck. It was the fear. And it was also the power of wanting to meet all my favourite persons on the earth once I get down. Love keeps me going. ♥

Another 7-8 hours hike again someday okay?

续抗癌与抗氧篇,最爱的抗氧食谱自制莓果综合沙拉酱后:在准备食谱之前我都在想,怎么让抗氧成分高的食物混合在以白米饭作为主食的亚洲国家饮食里。
再加上最近经常和糖尿病患者聊天,觉得准备这样的食谱 -三文鱼三色蔬菜糙米饭- 最适合了。[ 因为糙/红米饭的升糖指数(GI)值比较低 ]

三文鱼三色蔬菜糙米饭:
糙米 200g 煮熟 (我用的是三种米混合:糙米,黑米,红米)
洋葱 一颗 切块
大蒜 四瓣 切碎
红灯笼椒 一个 切块
玉米粒 半杯
豌豆 半杯
三文鱼 200g 切块
青柠汁 2汤匙
盐
黑胡椒
香料(丁香/ 芫茜) 一小茶匙
番茄 一个 捣成浆

做法:
1. 将切块的三文鱼加入调味料:盐、黑胡椒、芫茜。
2. 用筷子将调味和三文鱼块拌匀,腌制5-10分钟。
3. 少许油入锅。
4. 爆香大蒜和洋葱。
5. 加入红灯笼椒,玉米粒,豌豆,以及已调味的三文鱼。
6. 倒入已捣成浆的番茄。
7. 把煮熟的糙米饭加入,炒至散开。
8. 放入少许盐、黑胡椒及香料调味。
